About Us

Gamblers Bay Distillery was founded in Tampa, FL in 2019. While we may be new the craft distillery market our family recipes date back 120 years starting in Romania, traveling by way of Canada to land in Tampa, FL.

We are excited to join the growing market and love for craft cocktails and share with the Tampa Bay community a family tradition.

In our family a good drink has always been a symbol of a moment in time. Distilling fine quality small batched liquor has been a great source of joy and pride for our family and we look forward to continuing this for our next generation and sharing this with yours.

Tampa is home.
While we may not originally be from Tampa, all of our children have been born here and we have lived here for over 20 years and we have chosen to call this city that we love home. We look forward to incorporating local flavors and ingredients to create unique craft liquor for our hometown.

Our Team

Mark Paun
Master Distiller and Owner
Mark Paun, Master Distiller and ER Physician. When not treating patients in the Emergency Room, Mark is continuing his family's rich history in distilling by bringing it here to Tampa, FL with his wife, Kerri and their two children.
Kerri Paun
Distiller and Owner
Kerri Paun, Distiller and Owner. A graduate of the University of Florida, Kerri has spent the last few years opening the distillery and raising the next generation of distillers. Kerri has called Tampa home for the last 16 years with her husband Mark and their two children.

Navy One Navy Strength Spiced Rum

An 80 year old family rum recipe tracing back to our grandfathers rum running days in the Caribbean, refined in London to make it combination of delicate liquor and exquisite spices to have a taste like no other.

Citrus Tree Floridian Gin

This citrus forward gin is an expression of Florida, a careful balance of juniper, coriander, and Florida citrus. Excellent as a gin and tonic, variety of gimlets, and other specialty cocktails.

Florida Farm Vodka

This Double Gold Award winning vodka is made from 100% Florida Corn direct from Florida farmers. Florida Corn yields a clean crisp vodka with a slightly sweet finish. This vodka has been distilled 22 times.

Florapina Pineapple Rum

This Gold Medal Pineapple Rum is made with fresh pineapple and 100% locally sourced Florida molasses. Barrels utilized for this rum are specially toasted after charring to produce this well balanced and complex rum

Florapina White Rum

This white rum is made of 100% Florida molasses. This rum is potstilled with only the center 25% of the hearts collected. Tasting notes: Sweet Crisp Sugar Cane and Molasses, light and clean on the palate with sweet rummy finish.

Florapina Strawberry Rum

This Strawberry Rum is made with fresh local strawberries and 100% locally sourced Florida molasses.

Florapina Cuban Coffee Rum

This Coffee Rum is made with Cuban coffee and 100% locally sourced Florida molasses. This rum eliminates the need to make coffee or espresso to make an Espresso Martini

Recipes

Gamblers Bay Distillery loves making our spirits but we also admire a perfectly balanced cocktail. Please find below some of our favorites.

Rum Old Fashioned

1 1/2 ounces of Navy One Spiced Rum (114 Proof)
3/4 ounce Simple Syrup
2 dashes of Orange Bitters
Barspoon of Luxardo Cherry Syrup

Stir in cocktail mixing glass until chill. Pour over a large sphere or ice cube in a rocks glass. Garnish with Luxardo Cherry.

The Gulfside

1 1/2 ounces of Citrus Tree Floridian Gin
3/4 ounce Simple Syrup
3/4 ounce Lime Juice
Pink Grapefruit Soda (FeverTree)

Pour over a large cube or sphere in a rocks or champagne glass. Garnish with optional grapefruit peel or citrus twist.
